Rubio’s Fresh Mexican Grill (Nasdaq: RUBO) announced it will open its newest restaurant in Simi Valley.

What started as a fish-taco stand in Mission Bay, San Diego two decades ago has grown into a 150-unit restaurant chain with operations in California, Arizona, Oregon, Colorado, Utah and Nevada.

The Simi location represents a milestone in company growth, said Sheri Miksa, Rubio’s president and chief operating officer. "This restaurant features our new look based on the successful new prototype designed in late 2002," Miksa said.

"We’ve now opened over a dozen new restaurants in the past year and a half. They provide guests a dining experience that recreates a ‘slice of Baja’ and further establishes Rubio’s as a leader in the Fresh Mexican Grill restaurant category."
